Tasting Notes

When young has a hint of tarragon and crisp white wine, but gradually it mellows and becomes creamier. At 6 weeks the texture is firm and crumbly, It takes up to 12 weeks to come into its own could be too strong for some but sheer perfection for others.


Additional Information

Made in Ireland (Tipperary) by Cashel Farmhouse Cheesemakers using unpasteurised cows milk. Matured for 3-4 months and is suitable for vegetarians.
